iPod Hi-Fi - This is not going to work. If you've ever used one of these or anything close to one of these where the pod is docked, it doesn't work. It is impossible to keep the iPod docked and manipulate the scroll wheel.
The wheel works cause you hold it in your hand and use your thumb. On any of these docked thingies, it is impossible to use the wheel without picking it up and holding in in your hand and then the brain wants to hear feedback in the ears which you don't have cause you undocked it. Then if you foolishly turn it up, redock it and booom there goes the speakers. I very unpleasant exerience.
Get an old fashioned boom box with a line input, $5 cable from Radio Shack and you are in business. Now let's get on with getting real video into the pod.
